SUMMARY
Background: Diabetes mellitus is a disorder accompanied by hyperglycemia, dyslipidemia, oxidative stress and inflammation which are also involved in the development of cardiovascular diseases. We aimed to examine the influence of walnut oil on biochemical parameters, inflammatory and pro-atherogenic markers in the plasma of diabetic and healthy rats.

Groups and methods: Male Wistar rats (5-6 weeks old) were randomly divided into two groups – healthy control rats (C) and diabetic rats (D). Diabetes was induced by one dose of streptozotocin (45 mg/kg of body weight). One week after induction of diabetes each experimental group was divided into three groups: 1. rats without intervention; 2. rats fed with the walnut oil at the dose of 100 mg/kg of body weight; 3. rats fed with the walnut oil at the dose of 500 mg/kg of body weight. Walnut oil was administered daily for 7 weeks. Biochemical parameters (glucose, lipid profile) were analyzed by ADVIA 1800 Chemistry System. Thromboxanes B2, asymmetric dimethylarginine and matrix metalloproteinases-2 were determined by ELISA method.
Results: Walnut oil at the lower dose decreased glucose and triacylglycerols in control rats. In diabetic rats, walnut oil at the lower dose increased cholesterol in low-density lipoproteins (LDL-C) and decreased thromboxanes B2. Higher dose of oil increased glucose, LDL-C, asymmetric dimethylarginine and matrix metalloproteinases-2 in diabetic rats.
Conclusion: Walnut oil at the dose of 500 mg/kg of body weight impaired glucose tolerance, lipid profile and  pro-atherogenic markers in diabetic rats.
